Appalachia, a new restaurant near Old Street, London, offers authentic Appalachian regional cooking. This cuisine, characterized by smoking, pickling, and preserving, has been largely overlooked in London's dining scene. The restaurant's location on a side road adds to its hidden, off-the-beaten-path appeal. Inside, the space resembles a reclaimed saloon bar, allowing diners to observe Borer making cornbread madeleines. These cheddar-filled treats are served hot, reminiscent of traditional mountain cooking. While the space is more functional than luxuriously comfortable, it makes good use of its surroundings. Downstairs, the Lowcountry bar serves whiskey and cocktails with creative names, and also offers specialized non-alcoholic options.
