Bone Broth Rookie

Making bone broth for the first time with the leftover turkey carcass from Thanksgiving 🇨🇦! I’ve been simmering it in a crockpot for 12 hours on low, just added thyme and rosemary and plan on simmering for another 3 to 4 hours. Recipes online say you can add veggie scraps at the start but don’t specify any particular type. Looking for guidance on what veggie scraps I should/shouldn’t add next time.
