Looking at a recipe for brining brisket to make corned beef for NY Day. Among other ingredients it is calling for 1 cup kosher salt and 2 Tbsp salt peter. I don't feel like driving to the one place I know has saltpeter and would like to replace with pink curing salt. Can I just remove the kosher salt and saltpeter and replace with an equal amount of pink curing salt? submitted by /u/rtgurley
