The author learned to navigate Lyon's culinary scene over five years of living in the city. This experience helped the author avoid tourist traps that often cater to visitors. Genuine bouchons offer a different quality and historical context than those in popular tourist areas. Finding authentic bouchon cuisine may involve embracing local delicacies, including offal and red wine, even for breakfast.
