How would I make this?

I wanna infuse sourdough scraps into milk or cream, strain it, and turn that cream into a foam that can be placed on top of hot or cold drinks. Im not looking for a whipped cream texture. Looking for something looser than that. How would I go about making this? submitted by /u/Shutter-core
