I have a very different recipe to share, and I would LOVE feedback on it, even if you don't try it yourself! Here it is: Mexican Spaghetti Sauce with Whole Rotisseried Cornish Hen!
This dish features a whole roasted Cornish hen served atop pasta with a Mexican-Italian fusion sauce. The sauce starts with browned sausage and optional hamburger, seasoned with thyme and cayenne pepper. A whole Cornish hen is seasoned with salt, pepper, paprika, and garlic powder, then roasted until its skin is crisp. The sauce base is tomato sauce, enhanced with chipotle in adobo, BBQ sauce, oregano, thyme, celery powder, onion powder, and a touch of Tony Chachere's. This flavorful sauce is simmered for at least 45 minutes on low heat to remove metallic undertones. The fully roasted hen is then gently simmered in the sauce to allow flavors to meld and the sauce to adhere to the skin. Meanwhile, pasta, such as spaghetti or bow tie, is cooked until very tender. The plated dish involves placing the hen on top of the cooked pasta. Generous amounts of the flavorful sauce are spooned over the hen and around the pasta. The resulting taste is a delightful combination of crisp chicken, smoky chipotle, tangy BBQ, and herbaceous notes.
