Hello! We have an Italian plum tree and I picked them recenrly and decided to make a test batch of jam. However... instead of nice and purple/pink, it came out baby poop brown. Is this normal? Did I do something wrong? We did have to pick them slightly early in order to prevent the hornets from eating them, so some are just a little underripe.
