Oil Pearls : what went wrong?
I'm making olive oil pearls for an upcoming competition (I leave 6/23), and it has gone very wrong. My agar agar burned? I followed this recipe (https://www.cataniaoils.com/blog/how-to-make-olive-oil-pearls-at-home) using 200mL of arbequina and 2g of agar agar. It did tell me to add the agar before boiling, but that just let it settle to the bottom and burn, even with me constantly stirring. I am using a gas range, but we do have a flat top for even heat distribution. Also and aluminum pan. Cheers! submitted by /u/bonniesansgame
