So this chinese place near me makes the Chinese boneless spare ribs, and sometimes they are kinda red, fatty, and a little chewy. But sometimes it's a darker color and is tougher and kinda jerky like. So I really like it when it is made the tougher way, but I have no idea what I would say to specifically request it be made that way, like is it the cooking time or something that makes it that way or is it just me getting a different cut of meat? submitted by /u/killingbites
