hey y'all! it's been a while. I've been making these simple flatbreads lately and they're turning out well, but the original recipe I followed said they should puff up "dramatically" and mine don't really do that. sometimes they'll get small air pockets that expand, and yesterday one of them puffed up big but only on one half of the circle. they work great for my purposes, but the texture is better on the ones that puff.
is there anything about this recipe or method that I could alter to make them puff more consistently? or is the inconsistent puff normal with this kind of bread?
1 cup / 120g flour
scant 1/3 cup milk
1.5 Tbsp oil
1/4-ish tsp salt
mix the ingredients into a dough, knead for about 2 minutes, rest it for at least 30 minutes, then roll out pieces as thin as possible and cook over medium heat in a dry pan. submitted by /u/lovelylayout
