What am I doing wrong with my rice dishes?

I have no issues making regular white rice on the stovetop (or in the rice-cooker, for that matter). But every time I make a dish that involves cooking the rice at the same time as other ingredients (i.e. Arroz con Pollo, Jambalaya, etc.) I cannot for the life of me get the texture on the rice right. Some of it is always crunchy, and it's driving me insane. Generally I'm making these dishes in a medium dutch oven on the stovetop (electric, not gas). I've started adding more liquid than the recipe calls for, but it hasn't helped. Any advice would be appreciated. submitted by /u/Alley-errant
