‘Oyster sommelier’ is now a job, thanks to this new oyster-education program

The Oyster Master Guild (OMG) is a for-profit oyster-education company that offers a professional certification program for aspiring oyster sommeliers and shuckers. The program, which includes online coursework, hands-on work, and a final exam, aims to fill a gap in the restaurant industry by providing comprehensive knowledge about oysters. The guild was founded by Julie Qiu, an international oyster expert, and Patrick McMurray, a restaurateur, inventor, and culinary educator. The program has attracted nearly 200 students from 16 countries, including staffers from various restaurants in the U.S. and nonculinary enthusiasts. The certification can boost confidence in a restaurant's raw bar program and help customers feel better about spending money on oysters. It also helps oyster farmers connect their story to the end consumer, making the food experience richer. The global oyster market is forecasted to grow from $8.25 billion in 2024 to $10.29 billion by 2031, driven by consumer demand for premium oysters and a growing appreciation for locally sourced seafood.
